SATURDAY COOKING: ANNIKA’S SOUP

My friend Annika gave me this recipe ages ago and it’s a very healthy soup for a cold day like today (no salt, no fat, like a detox). To eat with any of my bread recipes…Or with kale and walnut pesto.

2 cans 400g diced tomato
1 onion, chopped
2 cloves garlic, crushed
pinch dry chilli flakes
2 carrots, chopped
2 sticks celery, chopped
1 or 2 zucchinis, chopped
4 cups (1 litre) vegetable stock

Method:

    1. Put everything in a big pot and cook over medium heat until all the vegetables are soft.
    2. Blend the soup.
    3. Eat!

Super easy! You can serve it with Greek yogurt or sour cream.
