One of my aunties gave me this recipe years ago. I had forgotten how easy it was to make and how moist it was (and stays moist for quite a while if you store it in a container).
3 eggs
150g sugar
250g plain flour, sifted
1 tblsp baking powder, sifted
2 tspn vanilla essence
1 cup (250ml) vegetable oil
1 cup (250ml) sweet white wine
2 apples, peeled, cored and chopped in small cubes
Method:
- Preheat oven to 180°C. Grease and line a 23cm square cake tin (or a 22cm round one).
- Beat the eggs and sugar until pale and fluffy. Gently incorporate the flour and baking powder. Add the vanilla essence, wine and oil. Stir in the apples.
- Bake for about an hour until a skewer inserted in the cake comes out clean.
- Eat!
I used a late harvest wine for the recipe. Quite a boozy taste!
